I am the vinification process in the E.Guigal Estate.

Let’s go back a few months at the time 2016 was about to born as a splendid vintage…
The harvest had just ended a few days earlier; the teams were already busy on the vats. They are working on the must and the berries while sugars are turning into alcohol.
The process is monitored and measured daily.
The soon-to-be red wine will be regularly “pulled up” in the vats to extract the most from the colour, the flavours and the tannin of the must formed at the surface.
